Over the past few months, Ian and I have been focusing on our overall health and wellness. We started personal training, we have been stretching at night, and we changed our diet. Now, we try our best to stick to a modified keto diet during the week and we do whatever during the weekend. I say that it’s modified because we do not follow all of the rules. Our diet is basically low sugar, low dairy, and kind of low carb. We do not eat bread, pasta, grains, regular potatoes, but we do allow ourselves to eat HEALTHY sugars and HEALTHY carbs. So, fruit is okay, sweet potatoes are okay, etc. Over the past three months, Ian has lost over thirty pounds and I have toned up and lost quite a few inches, so whatever we are doing is definitely working! So, today I wanted to share a recipe that we love that fits into this diet: low carb cucumber sandwiches.

I apologize in advance for the pictures that I took of this low carb cucumber sandwich… I was starving and just wanted to get them out of the way, so I used my iPhone and didn’t edit them, ha! #BadBlogger.

But, pictures aside, this recipe is killer and even if you are not on a keto diet or any type of low carb diet, you need to try this out! I promise you’ll love it and you will love low carb cucumber sandwiches for life! 😉 Jumping into the recipe:
Low Carb Cucumber Sandwich
This recipe is very flexible, so please feel free to add as much or as little of anything. We always change it each time we make it.
Ingredients
- 1 cucumber cut in half and peeled, if desired.
- 5 kalamata olives
- 1 tbsp pesto
- 1 string cheese
- 5 cherry tomatoes
- 2 slices turkey
Instructions

Scrape out some of the inside of your cucumber with a spoon.

Fill one side of your cucumber with your turkey. Add your pesto on top, then your string cheese.

Cut your olives and cherry tomatoes in half and then put them inside of your cucumber sandwich.

Close the sandwich and enjoy!
