As you all know, I’m not a huge fan of the keto diet. It does not work for everyone (definitely not for me!), but we do eat quite a few Keto-friendly dinner recipes around these woods because Ian has been following the diet for some time now…and it works for him! In fact, he has lost over 30 pounds since April, while also gaining muscle. I saw an Asian-inspired beef recipe on Pinterest a while back and decided to use it as inspiration to create my own recipe that fit Ian’s diet needs, so that is how I came up with this Keto-friendly Crispy Beef Over Cauliflower Rice!
I made it for the first time about two weeks ago and I received so many messages asking for the recipe. My goal was to respond immediately, but life got in the way and here we are, so I just decided to post a recipe on here anyway because all of you need this recipe in your life; I’m serious.
Keto-friendly Crispy Beef Over Cauliflower Rice
Keto-Friendly Crispy Beef Over Cauliflower Rice
- 1 lb beef
- 4 garlic cloves minced
- 1/4 C soy sauce
- 2 tsp sesame oil
- fresh ginger to taste
- 1 tsp chili garlic sauce
- cauliflower rice
- 1 tbsp sesame seeds
- 4 green onions
- salt to taste
In a bowl, mix together your sauce: soy sauce, sesame oil, ginger, and garlic sauce. Set aside.
In a pan on the stove, add your beef, salt, and any other seasonings you want to add in. Cook the beef completely. Once the beef starts to get a bit crispy, add in your garlic and cook for just a minute or two more. Stir frequently to avoid any burning.
One or two minutes before the beef is done, add your sauce and mix it well, covering the beef.
Serve on top of cauliflower rice and garnish with sesame seeds and green onions
