Hey everyone! It’s dinner time again. Today we made Chicken Fajitas, and they were easier than any other recipe I have posted, and tasted fabulous! I have a more complicated Chicken Fajita recipe that I will eventually post, but this is the easy version. 🙂 Unfortunately, I didn’t take pictures for all of my steps (shout out to MJ), but I spelled everything out so that it is easy to follow along. This recipe really is foolproof.
4 frozen Chicken Breasts
1 Orange Bell Pepper
1 Red Bell Pepper
1 tbsp. Taco Seasoning
Franks Red Hot (or other hot sauce)
Step 1: Take the chicken out and put it in the crock pot
Step 2: Cut up the Onion and Bell Peppers into long strips and put them into the crock pot, as well.
Step 3: Cover your ingredients in the crock pot with 2 cups of Salsa.
Step 4: Sprinkle the Taco Seasoning on top.
Step 5: Cook for 1.5 hours on high, stir the ingredients and then cook for another 1.5 hours.
Step 6: When your Chicken is done, shred it with two forks. Keep in mind that timing might be off depending on the crock pot you are using. Make sure your chicken is cooked all the way through!
Step 7: EAT! My favorite ways to eat the fajitas are on a salad, in a lettuce wrap, or in a quesadilla.
We top our fajitas with hot sauce, shredded cheese, avocado & lettuce. Feel free to use whatever else you want. 🙂 Enjoy!
