I always try to include plenty of fresh vegetables and fruits into my diet, but lately, I have found it more important than ever to make sure I am eating a well-rounded diet, with as many fruits and vegetables as possible. Tomatoes are one of those things that I try to eat everyday because they are so insanely good for you! If you didn’t know, tomatoes are known to possibly decrease your risk of developing heart disease, diabetes, and even cancer. Count me in! The good thing about tomatoes (other than the amazing benefits they provide to your body!), is the fact that you can use them in just about every dish, even appetizers. Today, I want to share with you a super simple recipe and the best snack: Caprese Bites!
When I grocery shop, I always search for a few different tomatoes depending on the recipes I am making, but I always make sure to get small cherry tomatoes to add to salads, and to even pop in my mouth as a snack by themselves. If you haven’t tried them this way – please do. They are so good!
To me, though, the most important thing about choosing tomatoes is not the type of the tomato, but the ripeness of it. It cannot be too ripe, or underripe – it needs to be perfect. I look for firm, bright red tomatoes that are firm and have a scent to them. We typically grow our own tomatoes in the summer, but when they are not in season here, we always get Fresh From Florida tomatoes, because I know they are very high-quality. Since they do not have to travel far, they are extremely fresh and now that tomatoes are in-season in Florida, they are the perfect ripeness.
In your store, look for the Fresh From Florida label on your produce, food, and seafood, and make sure you look very close because sometimes it can be hidden or small (it was small on my package of strawberries that I got the other week!). Florida Farmers make it easy to eat fresh produce year-round and since we know how good fruits and vegetables are for us, we all need to make sure that we are taking advantage of that. So, now since you know how great tomatoes are for you and how to find the perfect tomato, let’s jump into the Caprese Bites! These snacks are seriously perfect as a healthy weekday snack, weekend snack, party snack, or even as an appetizer. They are very healthy, extremely easy to make, and all of my guests have always liked them. Although they are amazing now, they are usually a spring and summer staple in our house, so get ready to want to make these all the time, but don’t worry – they only take a few minutes to make!
- Cherry Tomatoes
- Fresh Mozzarella Pearls
- Himalayan Salt
- Garlic Infused Olive Oil
- Cut each cherry tomato in half
- Rip the basil into bite sized pieces
- On your toothpick, slide on a tomato half, a mozzarella pearl, and a piece of basil. Keep alternating until the toothpick is fully covered.
- Drizzle with garlic infused olive oil (we found ours at a spice store), and sprinkle with himalayan salt.
