As you all know, I made a five course birthday dinner a while back. Today I’m here to share with you our last course (don’t worry, I’m still going to post the other courses. I just love this recipe)! We paired this with coffee and baileys. (YUM!!!!!) We did make a slight change to the original recipe – instead of making one big pie, we decided to take a muffin pan and make small personal pies. SO cute & good. Do it! Here’s the recipe:
Mini Cinnamon Apple Pie’s
1 box of prepared pie crust
1/3 cup of flour
1/2 cup of white sugar
1 cup of brown sugar
2 teaspoons of cinnamon
A dash of salt
8 cups of Mcintosh Apples, chopped
2 tablespoons of butter
1 teaspoon cinnamon sugar, reserved
Step 1: Preheat the oven to 425 while you cut up your apples.
Step 2: In a large bowl, put in your apple pieces, flour, sugar and cinnamon. Let them sit while you prepare the crust.
Step 3: Spray a muffin pan with a baking or cooking spray so that the pies do not stick.
Step 4: Place a piece of the crust into one muffin hole and fill with the apple mixture. Repeat with all of the holes (we made 8).
Step 5: Cut the butter into small pieces and add to the top of the apple mixture
Step 6: Make your top crust! We just did a cross pattern, but you can do this anyway you want as long as there are some slits or holes to let the air escape.
Step 7: Crack an egg in a bowl and brush the egg wash on the top of the crust to give it a nice golden brown look.
Step 8: Add the reserved cinnamon sugar to the top.
Step 9: Bake until the crust is a nice golden brown – about 12 to 15 minutes.
Step 10: Let cool and then devour!
